Hong Kong is THE place for sightseeing, shopping, nightlife, food and much much more, period. As a tourist, you will probably not find another place which offers almost everything you wish to do.

You can find lots of parks, museums, theme parks, nature spots and not to mention loads of shopping malls and complexes. Visit Tsimshatsui (pronounced Jim Sha Soi), where it is lined with shopping malls selling branded items from all over the world, at a cheaper rate than what you can find in North America or Europe. Pop by Harbour City, and be amazed by the offerings inside. Remember to explore the street markets too.
Traveling around Hong Kong is easy. Take the MTR (train or subway) which will take you to practically anywhere in Hong Kong, just remember to check for the correct exit when you are heading out to the place you are going.
Do not miss the famous Dim Sum, they are by far better than any you can find around. Also try the Congee (porridge), the varieties available in Hong Kong and the taste is indescribable, you just have to taste it.
As a business center, Hong Kong hotels are generally more expensive compared to other cities in China. You can still get a room at a Hong Kong hotel for around HKD400, whereas the higher end hotel rooms are over HKD5,400.
